You can mix the paint with mineral spirits, a whole can in advance and keep it in a juice bottle. That way you can have in you tray just what you need for each panel. Always keep the lid on.
About the scratches from sanding, I had some rough areas in my bug, but after the 2nd coat they are almost gone
