What you decide to run with for heads, intake and carb will pretty much set the max rpm and power you can achieve. Stock heads ,even fully ported, will limit airflow quite a bit and the torque peak will be much lower than a larger port head. The choice of those items will then help you pick the cam and headers, and how much you have to work on the oil system.
The first thing to do is to set your budget. That will tell you how much you can dedicate to heads and head work. A lot of the other parts are going to be the same price, or close.
Sticking with the 750 might limit your head choice as well. That is something to talk over with a good engine builder.
