Exactly my thinking when I restored my '69 Super Bee a few years ago. It too was missing the original engine, so I went with a color I wanted at the time.
I absolutely love the way the Bee looks, but I really wish I painted it gold, which is how it left the factory. This realization happened the day I saw a freshly painted gold '69 Dart at a local show. There is no way I am going to re-do the car as it is a nut-bolt restoration.
I too vote for keeping that Coronet silver, but I will go a little further. If it were my car, I would stick with a 440. In its original configuration, that car seems like a gentlemans' hot rod, which is realy cool (plus, that 440 will give you very trouble-free miles).
