Get the best machine shop you can find. If they are not backed up leave. Good machine work is not sexy or cheap but properly done can save you big time and you can find some power as well. Assume nothing. Assume nothing fits right or perfectly. There is a reason that most engine shops have loads of machine equipment and tools. If it comes in a box assume you will have to work on it regardless of who's name is on it. If building a stroker like you say grinding clearance is key area of concern. Be ready to mock it up SEVERAL times. Don't be afraid or to prideful to ask for help when needed. No shame in asking questions if you don't know something and do not assume that you will always get good advise. Ask several people if you can.
