I think it's more about the ability of the pump to recover quickly when the solenoid(s) open. Once everything is flowing at steady state, you're right, a small pump should flow enough on paper. Nitrous fuel pressure usually drops off when the solenoids open on the data log(on my junk anyway). A decent sized pump will recover and the pressure settles sooner after the hit.

So should I just run a 1/4" line off my black pump and be done w/ it?

No. That's too small of a supply anyway. Here's what I did and used many times, supplies the motor and kit. This will work great.
Holley black pump, 1/2" line to the regulator that fed the carb out of one outlet. I came out of the 2nd outlet into another regulator which supplied the fuel solenoid with a -6 whip. Set that second regulator to 5.5psi flowing through an .073f jet. I used this exact system spraying 175hp jetted 73n/73f. Even if you go bigger on the fuel jet you set the pressure through a .073f jet. When it comes to a good nitrous fuel regulator you can not beat the cheap Holley regulators
