That is a common problem with the low deck blocks. You can try some different brands to see if you get lucky. Or have the crank ground and start over.
What is the largest clearance I can get away with? This will be a low horse build (~335 hp) in a daily driver.

Mock it up with a std set & measure what you get (& post it). A high vol pump MAY help if it's a bit excessive

I had over four thou clearance on the mains on a street 440 when it was put together over twenty years ago. Has had a lot of street miles along with some passes at the track. No problems.Has 60 psi oil pressure at 1000 rpm and 80 going down the road with a Milodon hi vol pump.

Sure, but if he has it apart now, why not just do it right and either cut the crank .010 or locate the .001 bearings? I'd spend the couple extra dollars now so I didn't even have to worry about it later.

Hmmm, Main and rod bearing sizes std, .001, .002, .010, .020, .040, .060

That's a generic listing , there isn't any guarantee they have a .001 oversize set.
