Simple. The faster you go the more horsepower it takes to push you through the air. An engine puts out heat in proportion to the work it is doing. As the speed goes up the waste heat increases and the radiator has to run hotter to transfer the extra heat to the air going through it.
So what does this mean? Either your radiator is partially plugged, or fouled, or you need a bigger one.
