And the fastest thing she has ridden in is probably the 14 second Duster ...

My first request to her was to get into a Go-Kart...

After that, I figure a full training session about the car, cockpit test, starting and running the car in the pits, and lots of practice of the driving routine.

After I feel she is ready, some low to medium power launchs by setting the throttle stop.

It sounds like she is the type to be able to do it.
I like your basic plan, except for one thing.
IMO, anyone should have a year racing something slower before getting into a 9 second car, not to mention an 8 second one. The experiences of racing a 12 second car for a season will go a long way if something goes wrong when she transitions later.

A few race days (or test and tunes) with any street car will help her confidence in the procedures of staging, etc.
It isn't a problem driving your race car when the run goes well. It is getting ready for when things go bad and the driver is able to save the car and her life. Things like quick reaction when to lift, steer, brake (or not to brake), etc.
