On my EFI race engine I just screwed the vacuum sensor right into the fuel pump blockoff for dyno testing. For a race car I'd probably suggest using a hose so the sensor isn't exposed to so much engine vibration. It is nice to have a sensor hooked up to a datalogger rather than watching a vacuum gauge but a hose to a vacuum gauge will work if you don't have a data logger.
