I suspect there is probably a speed limitation to get the full range of mileage from the charge, I wonder what that might be? 30 mph? If its 30 mph, would 60 mph cut the distance in 1/2?

The higher models will have bigger batteries.

They've also found that they can get a bit more range with two motors, since they can get more regen when slowing down. The dual motors are more for acceleration and handling. In light driving, it may only use one or the other most of the time.
