A 65 or older Valiant would be the best to start.

2800 will have fiberglass and not stock interior. Problem is when you put a cage to make a car rigid with sticky tires the weight goes back on.

The circle track late model race cars I worked on had full fabricated chassis with a thin floppy fiberglass skin body weighed 2650 lbs (with the trickest parts) before we put lead back in it. Most others were 2750 lbs.

Drag cars are a different animal.
