The tank may hold 18 or 19 gallons, but my car (with a repop sender/pickup) quits running at about 16.5 gallons. DAMHIK

Wow, you're doing pretty good at that. My old '70 440-6 'cuda (with super-track pack) used to go maybe 100 miles on a tank of gas, which worked out to about 4-5MPG on the street and maybe 6MPG on the highway.

But with 355 gears & a 4bbl.... shouldn't I be able to do a bit better than 7mpg? The car doesn't get driven much so it's not so much the cost of filling up but the lack of range I will get with the car.
I just filled the car up from empty (engine quite). It took 17.2 gallons. That's up to the filler neck.

Another alternative is a 2 bbl and/or lighter shoes! Seriously though, short trips use up more gas that one long one too. Just a thought (Edit: Srry Greetween. Missed your comment about short trips...)
