Where would be the best place to connect the hot lead for the auto choke?

What kind of choke? Aftermarket like a holley or edelbrock you can tie into the power wire that feeds the coil, so long as you do it before the ballast resistor. Best is to follow the wire back to where it gets its power from, mine has a junction relay block on the firewall with a switched 12v feed. Stock chokes with electric assist need the temp switch that threads into the intake manifold or else the choke will open too fast.

Its a edelbrock choke. Its now connected to the hot side of the tallest resistor but it seems to open way to fast.

To delay the opening, turn the black plastic housing in the direction of the arrow. Turning the housing tightens the spring that closes the choke butterfly, so more tension on the spring will cause the choke to stay closed longer.

I've read that the Edelbrock chokes open way too fast. Wouldn't hooking the power up AFTER the ballast lower the power to the choke...letting it open slower?

I don't think it would open completely with low voltage.

I spliced the electric choke hot wire on my E-Brock #1406 to the field wire that goes to the alternator...NOT the power wire. The field wire is a light gauge and is only hot when the key is on.

The instructions do say not to wire to the alternator and I am sure they say that so that a Chevy guy does not burn his car to the ground smile

Realize that as soon as you turn your key the electric choke starts to warm and begins to open....

So if you turn on your key without starting your car for a bit you lose some of the carb choke....

I wire that into my Ebrock chokes as well, worked fine for me.
