If I had to buy a new carb for a stock 383, I would be looking at that holley street demon carb as well. It seems like it would make for a great street carb.

For an otherwise stock 383, I wouldn't run the edelbrock performer RPM intake. Hot rod's 383 intake shootout showed the edelbrock DP4B and edelbrock Performer did a little better in the bottom end. A stock headed, stock cammed 383 is never going to benefit from the upper rpm port flow their test engine did. And the smaller runners will crisp up throttle response and driveability.
