Isn't Gravity considered HVLP?
I run a Devilbiss FinishLine 3 (obsolete now) I am by no means a painter, but when I sprayed my car with PPG (I jambed three cars with Metallic paint)...I had 22psi at the gun. Having a regulator on the gun at the inlet is imperative...if you have it a regulator at the compressor you don't know for sure the loss you can incur because of the length on the air hose.
No, gravity can be either HVLP or Conventional. Depends on tip/air-cap/needle design.

 What Cuudak said is spot on, also...........you still haven't mentioned if you are using single stage or base/clear? Two completely different animals........with single stage, you apply the paint (as suggested by Cuudak) being very consistant, then I usually dust a coat over the hood/trunk RIGHT after the last coat to even out the metallic. The sides too, depending on how they look. With base coat.........well, base coat is so easy you can almost apply it while watching TV, just dust the final color coats then check for mottling. If you have a gun that you are used to use it, if not get a more modern one. They shoot better. Just my

if you are spraying base coat you might want to be careful when you "DUST" the last coat. some base coats when they are sprayed on to dry the clear coat will fall off.
when spraying single stage make sure you "DUST" the paint over wet paint. if the paint being dusted is to dry will give you excessive orange peel.

I own a shop and spray on regular basis,I like using slow reducer and very slow hardener when shooting any type of paint,metallic or solid color,base/clear or single stage.It allows a much better flow out and nice smooth finish,most paint nowadays have flop control additive ,it controls ther metallics helping to get them to be more stable without mottling and blotching.It's been a long time since I had metallic control issues, when spraying metallics,first coat 50% overlap,25% on following coat(s) ,every coat must be sprayed in X in relation to previous coat,that means if you shot the hood in front to back strokes,next coat must be done in left to right,
