I have that size rim on my 67 Coronet 500 and the biggest tire I managed to put in it was M/T ET Street Radial P255/60/R15.

One thing that makes a small difference is if you still have the '66 housing and not the wider '68-up unit.
I had a 275-60-15, 15x7" rim with 4.25BS, on a '67 Belvedere with a '69 housing. It fit, barely, with rolled fender lips.
Since a 275 tire is really too big for a 7" wheel, I plan to change to a 255-70-15 with the same wheel and use the original '67 housing.
Most 275-60-15 tires are 28" tall. I don't recall and height issues, that's why I'm going with a taller 70 series tire so I can get the highway RPMs down.
If you go with a 275-60-15, don't use a 7" wheel, use a 8" rim with 5.5"BS like Hemi ragtop did.
