Other than cutting the spring, anyone have a good suggestion for removing the clutch helper spring on a 70 Cuda?? Thanks in advance.

Cram as many washers between the coils as you can as a helper depresses the pedal for you.
When you've done that then grab a BIG screwdriver or a suitable pry bar and simply wedge the near end off the pin. Its scarier than it sounds, while the spring is huge, it has very little travel.
Wear safety glasses though.
