The overall combo is certainly a factor on what the actual operating range will be.
On a mild build like yours, it’s obviously not going to make power to 7k.

So, you’ll likely lose some bottom end, and pick up in the middle somewhere.
It wouldn’t be my first choice for a combo like that, but there aren’t a lot of options if you’re looking to buy new.

I’d probably run the M1 single plane if I had the choice, but you’ll be looking for a used one.

I don’t have a feel for how the EFI affects the way a manifold behaves on the motor, since it’s not reliant on the way the manifold/carb/carb signal interaction affects the power curve.

My gut feeling is, the low speed manners of a higher rpm manifold are better with EFI than what you’d get with a carburetor sitting on it.
