Yes the Edelbrock dual setup with a couple of Edelbrock carbs would be fairly inexpensive (by Hemi standards) and should work really well. If it was me I'd use the Edelbrock carbs that are jetted for duals. I think they make them in 500 and 600. I have a set of the dual 500 Edelbrocks for the dyno room that we've used on a ton of engines over the years. Those carbs always work great regardless of what they go on. Blower motors, tunnel rams, cross rams, etc. A pair of them will easily handle 700+ hp and they don't cost much to buy.
Not to be a PITA, but dual 500-600 eddy carbs on a 572 will make things worse. Right from edlebrock the 500cfm rated carb flows a little over 350cfm....
We run dual eddy 800 Thunder series....They were very close OOTB on a 572 Hemi....
