OP seems to have more of a street engine than a race engine so the 750 would work better 90% of the time.

If the car spends all of its time on the street then I'd use a Performer RPM with a 800 cfm Edelbrock carb. I ran that setup on my low deck 470 and made enough power to run mid-11's in my '65 Coronet. (with HP manifolds)
