If the budget is a little bigger a 408 with some cylinder head is a fun way to go.

But it is a slippery slope when it comes to how much is enough when it comes to go fast stuff.




The 408 is a natural for street/strip action and if that is not enough motor for you, there are increased displacements all the way to the "popular" 426 cube mark. A 340 or 360 block can be used.
