The carb seems a little big for the cam, cubes and stall. I'd try a swapmeet 600 Holley since they're cheap to find. Switch back to the 750 when you do track time with the nitrous.
Do you have the valvesprings to compliment the cam?
Is that a calculated compression? How much is the piston in the hole?

Im not too worried about the carb, the engine wont really be in too long. when I put the 360 in I will probably give the 318 to my son, for a project when he is ready to drive. The 750 will go on the 360.
The valve springs are comp 901s The compression is calculated piston sits around .017 in the hole gasket is 4.1 bore and is thin compresses to .038 releifs in piston 4cc heads measure out to 70cc

750 Holley 3310 is perfect for that motor IMO.
With a very similar combo I was running 14's @ 95 mph with no traction and 3.23 gears.
My compression was lower and the car weighed 3,400.
Mine was low budget as well.
A very fun motor that I wish I still had!
