Just wondering what would be the best tire size to run on a 70 Roadrunner with factory 15 x 7 Rallye wheels ? I would like to have as much tire as I can with out rubbing them.

225/70/15 white letter BFGs, just like everybody else, me included!
Everything else is too short.

This is 235/60-15 in front...
295/50-15 in the rear...

A '70 Road Runner with 15x7" wheels would've had F60-15s from the factory.
Modern equivalent would be 235/60/15s all around. 245/60/15s will fit no problem.
If you go to 255/60/15s all around the front starts getting close, maybe too close depending on your ride height.

245/60/15s on the front & 275/60/15s on the rear would work for me!!

IMO most 70 series tires on 7" wheels don't look right (narrow tire/wide wheel)

A 215 is for a 6 inch rim and a 225/70 is for a 7 inch rim.
235s are too short unless you like the light space between the tire and rim look, or rubbing every speed bump in the parking lot???

I would think a 275 or a 295 would be a little much for a 7 inch rim???
My car looks just fine with 225/70s on a 15X7 inch rim, think, think not???

as long as the ratio has a 70, or a 60, go as wide as you can, without the cartoon looking "balloon" effect taking place. 235 on front of my ride, and 275 on the rear, still looks right.

Tire manufacturers have approved wheel sizes for particular size tires, there are no hard & fast absolutes. I have a Goodyear tire engineering data brochure from '86 that has plenty of dimensions/numbers in it to aid in choosing the tires for your ride.

Under Eagle GT - they recommend:
215/70HR15 5.5"-7.5" wheels (tire has 6.64" of tread)
225/70HR15 6.0"-8.0" wheels (tire has 6.86" of tread)

I prefer more tread than wheel width, it helps to give radials the "squared off" look the Polyglas & Wide Oval tires had.

If one is going for the "High & Mighty" look, I will agree a 60 series tire on the front doesn't help the "look". "High & Mighty" needs more of a big & little combination of tires & wheels. IMO with tall & skinny tires on the front, the rears still need to be as tall or taller than the fronts.

275s are pushing the limit on 7" wheels - they won't wear evenly but they work and look great & if you look at the Road Runner pic above the 295/50/15 rears are on 8" if not wider wheels.

You have to be happy with your car, I'd be happy with more tire, especially on the rear. Here's a pic of my brother's '68 GTX with 225/70/15s on 15x6.0 Spyder Wheels. It works but isn't ideal, the "old school" wheels are the limiting factor.

I dunno on a 7 inch rim On the rear on the rear I like a 275/60 that's what I run but on an 8 inch wheel
