if you leave EVERYTHING the same, you'll have a high torque low reving combo. SB strokers have different component requirements than a stock stroke combo.

Long, long time ago i had a 340( original motor) in my 70 Duster. I had added bolt ons, and then put eddie heads on it. I had Hensley build me a 416 using my heads and a core block they had in inventory. I asked Ken Hensley how much better a 416 would run than a 340 if they both had the same heads, headers, intake, cam and carb.He told me 3 or 4 tenths. I went with about 1 more point in compression, a bigger cam, and had the heads stage 2 ported at that time, so some definate changes over how the 340 was set up. I threw the 416 in the car and it picked up a touch over a full second over the 340. But, bit more squeeze, more lift and duration on the cam, and the stage 2 port job. Convertor, gears, carb and intake, headers remainded the same. Your results may vary. IMO, with a 2 sizes to small head like an eddie on a 416, the gains wont be as significan on a stroker over a stock stroke motor( but as i said above, still very noticable) with good heads more suited to a stroker( Indy, W5, etc,) the gains going to a stroker and swapping those " good" heads over might be a good bit better, perhaps.
