The 600 would be fiine but myself I would use the 750 vac and jet i t accordingly in the front. It will only use what it needs for secondaries. Vac secondaries are great for the street.
Clean it, if it's Dirty. Oil it, if it Squeaks.
But: Don't fix it, if it Works!

Ever use of a spring kit.
A 600 or 750 VS carb will work well on a d/d 360.

The chart stands correct.
My 323 gets about 500 cfm from a 600 holley vac sec with the yellow spring. a snorkel air cleaner gets 500rpm open sooner, a KxN cold air would be 500 rpm later in the RPM range.
Shifting at 5-5200 rpm tops with hydraulic lifters.

600cfm better mileage probably? 750cfm definitely more power! I'd go with the 750cfm for sure.
