So I finally got one torsion bar in and tightened the adjuster bolt, but decided to back it out just to make sure I counted the turns right. For some reason it was near impossible to turn it counterclockwise at all. After turning it maybe 1 turn in 10 minutes I gave up and realized the bolt bent while trying to loosen it.
1. Why was it so damn hard to loosen it, is there something I didn’t think about?
2. What’s the best way to get this bolt out without damaging anything else?

The best idea is to take all the weight off the front suspension before twisting the adjustment bolts.

did you use any lube on the threads when you installed the adjuster bolts ?
if the bolt is bent, the only fix is to cut the bolt off next to the block, then replace both pieces.
it sounds like the threads are galled on both.
you "may" be able to heat the block enough to get the bolt to screw out, but they both need replaced just the same.

Don't adjust the bolts with weight on the suspension.

I did have the weight off of the suspension. I installed the torsion bar and tried adjusting it right after. I tightened and loosened it once and the second time I got OCD and tried to loosen it again to make sure I knew exactly how many turns I made. When I tried backing it out it wouldn’t come out and me cranking on it caused it to bend.

Those bolts carry a lot of load so you have to coat them with ARP lube or high pressure grease. Adjust them with the weight off the suspension and you should be good to go.

Be sure you have the weight off that suspension because the torsion bar will still have some pressure on it. Have you got a saws all?

If it was my car I'd pull the LCA out of there. It only takes about 30 minutes if you have the right tools. Get the car up in the air, knock the torsion bar out, disconnect the two bolt to the knuckle, unbolt the strut, remove the LCA pin nut and knock the whole thing out of the there. Then you can take the LCA to a shop and have them cut the old bolt and mount out of there. Shouldn't take too long with a saw or a torch.
