pretty sure you can still get them new, i bought a set a few years back.
if i had to guess they are probably to prevent squeaks and rattles. otherwise, with out the gaskets it would be metal to metal.

Leave the foam gasket on the bench with the dust shield where it belongs. You'll get better cooling, etc, and not have to worry about gravel/etc.. getting stuck between the rotor, and the sheild again. FWIW I've done at least a dozen brake swaps with no dust shields, and never had a problem. Most modern applications do not have a dust shield on the rotor, as they are useless .

I actually will be doing that whenever I mess with my brakes again. I have a problem with rocks getting stuck on my ford ranger while off road. extremely annoying!
