Logic tells me that there's no difference, but someone told me that V8's had more drop for pan clearance

On the 64-66 A link yes the V8 one has a dramatic amount of drop compared to the 64-66 A /6 link & is required on a V8 swap on those years (63-66). Someone mentioned once that using the 73 up link rather than the 68-72 link & related components on a 68-76 A body gives a slight amount of addit'l pan clearance for a V8 swap as it positions the center link slightly lower tho as said in either of those 2 categories (68-72) (73-76) the /6 and V8 bars are the same in each category but are different from the other years' group. Something about the idler/pitman arms entering from the other side of the centerlink on the 73 up setup giving a slight bit of addit'l clearance than the 68-72 setup would which might be beneficial/needed on a tight setup & they do interchange & I believe just need the correct pitman/idler & the end holes for the tie rod ends are turned 90 deg between the 2 groups. Not sure if the reported addit'l clearance is correct & may not even be needed & no actual experience with that but just a FYI. I swapped a BB into a /6 shallow centerlink 1969 A body with the engine swap mounts (Schumaker iirc) & the std pan cleared with ease

Oh OK the 68-72 setup rather than the 73-76 is the one that gives the most clearance

How do you arrive at that, because of the drop in the link.

The attachment method tend to put the area of potential interference in about the same position on both centerlinks.

Since one comes from under, the other from above.
