IMHO the whole car should be assembled, and stripped of all items not going to be painted body color, the only componets that should be jambed off the car, prior to painting, are the hood and trunklid, the entire body should be assembled and panel aligned, shoot the body/engine compartment/door jambs/trunk jamb at the same time, painted mirrors and such can be painted off the car at this time, depending on the color, your skill level, humidty, etc, etc, batch painting major panels off the car can result in shade/texture differences, best to paint the car as whole as you can, there are exceptions for each car/componets,...plus installing pre painted fenders/doors/etc always leads to that "uh-Oh!" boo boo

That's my plan... Shoot door jambs, trunk, engine bay, inside of doors, underside of hood, etc. Then hang all panels, mask the jambs from overspray, and shoot entire outside of car at once

You avoid "tape lines" by "back taping", that involves rolling the tape over on itself, so that you leave a soft edge, that you blend into later, avoid hard taping (leaving an edge), you either back tape, or you let the tape overlap the edge of the panel being jambed, later on, lets say in a door jamb they may have been jambed prior to painting the entire car, you can use apperture tape, it's like a foam cord, with a strip of semi tack adhesive on one side, you install it on the jambed paint edge, exposing just a thin line of color on your back taped painted edge, then close the door/panel/trunk lid/etc/etc/etc, it leaves the panel gap blocked off from overspray, yet allows (depending on the depth you set it at) the paint to wick in and blend softly with the "jambed" jamb, leaving you with a professional blending of the main body paint and the jamb paint, apperture tape is only used on pre jambed areas, or areas you don't want paint entering, but yet want a soft transition line of color/spray

How do you recommend doing this all at the same time? Are you opening and closing the doors as you go? The last car i did I shot in pieces and reassembled. It turned out great however I would much rather shoot it all together but I want to avoid tape lines.

Must be snowing in HeII, I actually agree with Dayclona!
You don't have to worry about tape lines either because there's usually nothing to tape off! Also, don't forget the body caulking between the fenders and inner fenders, etc. that got painted over as well.

Real answer, painted all together and did mostly a poor job in engine compartments,trunks, and door jambs. Outside was decent for the era in which they were built.
