The engine shop can get me a 650 Mighty Demon -all he says I need- or they also deal with Quick Fuel but he wont recomend the Quick Fuel because I haven't tested it. I like the idea of a choke but its not a deal breaker.

3.55 gears and a 727 with 3000 stall from SMR, stage 2 shift kit from transgo.

With that convertor and gears, I would go with the annular QF, and with the 340, they like 750's...I have one for sale if interested I ran on my 360, and it was awesome. Very similar set-up to yours....An annular carb is more responsive and acts like a carb that is 200cfm smaller than it actually is.
