Do they sell a pipe fitting that adapts the threads from the larger sending unit to the smaller intake hole, or is it best to drill and tap the intake for the larger 1/2" NPT sending unit?

(1) yes (2) maybe. Someone brought up something priorly about the sender needs a certain amount of depth into the coolant to register properly. I ain't sure if that is valid or not but you might see what others have to say and call Autometer. Is the boss on the intake large enough to go out to 1/2NPT?

Probe should fit so that it is in the flow of the coolant for most consistent accurate readings. If using to many fitting and getting it out of the flow there a chance of air pockets and slower moving coolant than in the main flow.
