I will first qualify that I have not run my new car yet. I did run a 63 Polara (10 teens)with 32" bars in the past. Car repeated pretty well,but not as well as thought it could. I spent a lot of time researching before building the new car. With a longer wheelbase and an anticipated higher horsepower level 36" bars were chosen. I agree at your E.T. level that Cal tracks should work. If building from scratch I would have gone with ladder bars. Cheaper,lighter,easy adjustment. In my opinion more consistent. The key as always are good shocks. Double adjustable could be your answer without the expense of changing rear suspension. Weight and power play a major role in 60 ft as well.
