We used to be able to just post our experiences with N20 on here as is, but it's become so politically correct that if we simply tell you what we did without disclaimers and warnings we get in big trouble from the "Nitrous police".
So I'll just say, I've ran flat top 440s wth a single stage NOS big shot plate 4500 M-1, with a nitrous jet in the 90s on many different cars with no problems...typically good for about .8 to a second in ET.
Sealed power flat-top, stock rod, 292/509 440 11.81 to 11.10 in 3600 lb RoadRunner 11.45 to 10.57 in 3400 lb Coronet 10.81 to 9.83 in 2800 lb AMX (better heads)
Trw flat-top, stock rod, roller cam 440 10.83 to 10.00 in 3400 lb coronet 10.73 to 9.64 in 2900 lb Challenger (Glide)
Ross flat-top roller cam 451 10.25 to 9.19 in 2800 lb AMX
All of the above examples were with cast-iron 906/915 heads, using the same fuel system that fed the engine.
Not trying to tell you how to do it, I'll leave that to the experts, just giving examples of what we did.
