taking the poly motor out of my 65 coronet and installing a big block , can anyone tell me what motor mounts to use ? and what driveshaft will work.

I have used big blocks on some earlier cars that came with polys. You should be able to use the can style mounts from a 58-6? big block. If yours has can style mounts, you can actually use them with some modifications..

rubber insulators are the same for any V8 wedge 1963-1964-1965,in a B-body, all you need are the correct steel engine mounting brackets, here is a picture, they are sold in the Moparts.com B-body parts for sale section....

driveshaft depends on what transmission you use....4 speed? 727? slip yolk?bolt on ? you just need to get the engine,trans&rear axle installed and get the correct yolk,then measure center to center of the u-joints to get correct length.
