The stats are as follows. A 440 bored .30 over,Eddy RPM heads, Intake,600cfm carb, comp cam (mild), headers, 295/55/15s ET drags..in a 1968 B Body. Currently has a 2.97 open rear...ugh
I want to take it to the track occasionally (6x per season) and cruise whenever.
Is 4.10s too much for local street cruising. I might be trying to do too much but am in a pickle.. All comments are welcome..

Having been the route with many set ups - I would recommend for your application to go with the 3.55's. Being you will be mostly cruising, I also recommend a vac secondary carb like the 750 Holley vac. They will give the secondary usage when you need it most and not before,
Clean it, if it's Dirty. Oil it, if it Squeaks.
But: Don't fix it, if it Works!

I don't have the gears yet. My tires measure 27.8 inches tall so I am starting to understand where all this is taking me. I guess I can always upgrade to bigger gears in the future..

4.10's are a blast around town, but if you plan to spend time on the highway you may find that you do not like them. Speaking from experience, my wife's '70 Barracuda is running 4.10's with a 295/65/15 tire...it's definitely not for a long highway drive. As an example, I would not hop in it and drive 7 hours to Columbus for the Nats. We do drive it the 25-30 miles to the track without issue. 3000rpm is 60-65 mph.
Given your relatively mild combo, I'd personally go with 3.55's and a 3310 Holley as mentioned above.
If you decide on a more aggressive cam and have a loose coverter or 4spd, run the 4.10's for loads of fun.

Ok, your talking a TORQUE monster 440, not a 318 here. IMHO for a 90% street/10% strip car with loads of torque, the 3.55's should get the job done. My 78 LRT came with a 3.55 Open 9.25 and it is ok but running over 3200 RPM at 60 MPH is the pits if driving over 25 miles. I must wear ear plugs if going any farther. It is compounded by having those twin stacks right behind the head. I could not live with anything like 4.10's without a OD trans. I will be putting a set of 3.21's with a SG in a 9.25 in my LRT soon. But I also have a 3200 RPM lockup converter that I will be putting in too. Now give me a A-518 OD and I may put in some 4.56's as that will get me back below 3.55's in OD.

My car with 4:10s I found "Not Fun" to drive where the speed limit was 55mph. We all know if the limit is 55 everyone is driving 60 and 60mph produced an RPM too high for me- for any distance.
Keep old mopars alive.

I was thinking on the way in to work this morning... How many here drove Super Track Pak cars back in the day? Or to open the playing field, any make of car with 4.10 or lower gears as a main source of transportation? Other than the period when mileage was on everybody's mind, was anybody concerned about how many rpms were showing on the tach while tooling down the highway? I was born in the early 70's, so obviously I was not old enough to experience it. I'll have to ask my Dad for his feedback this weekend. He always had some sort of musclecar back in the day.
