So, I have the dyno booked for Monday. The engine is filled with Joe Gibb BR oil for break in. Once I'm done on the dyno, then what?

My choices are:

Try to find some Valvoline VR1 SAE30 (since they don't have a 10W40, and 20W50 is a bit too thick)

Go to a Brad Penn 10W40 Semi Synthetic

Or a full blown synthetic 10W40 Amsoil

Even though it's a roller cam engine, I think the zinc would benefit in other areas.

I guess my question is, would the rings be sufficiently seated after the dyno session to go to a synthetic oil?

The rings should be seated in a short period of time
so that would allow you to run what ever you want.
I blend a couple of oils(thick and thinner) to get
the pressure I want after a pass when its hot

I guess the rings would be seated but if it were me, I would run some good ol dino oil in it the first weekend and get it under a load for a few passes before I broke out the High $$$ synthetic.

I like to change the filter after the first 10 passes or so too.

I ran VR1 20/50 in mine this weekend for the first time out and I will switch to Brad Penn which is only partial synthetic in a few weeks.
