I'm having a Dana narrowed for one of my 62's. Should I offset the pinion to one side like the 8 3/4. Or can I just put it in the middle?

When Mosier narrowed mine , they did the standard Mopar offset.

Make the driver's side tube and axle 1 3/8" longer than the passenger's side. This will yield a stock, Mopar passenger car pinion offset.
