Yes, this is a common problem on those motors. I believe it has to do with the placement of the PCV valve, but I don't remember the specific details.
I've got an SRT-8 and what I've had happen once or twice is this: You run the car hard and then park it. You come out the next day and start her up and you get a huge cloud of oil smoke out the pipes.
It freaked me out the first time it happened as you might expect. Turns out it's just the air intake design that allows oil to be pulled up from the PCV and puddle in the intake/air cleaner (somewhere in there).
If you drive normally for a few minutes after WOT runs before parking it, the problem goes away. The other way to manage it, probably more for drag stip fun, is to install a catch can like you described. The oil puddles in there instead and you can just pour it back in once you gather enough to.....pour.
