I have a set of these pistons too. The compression height is 1.920". I think the stock CH is 1.908". I was curious myself as to how close to the deck they are. Was the block decked? I have a 71 383 with .040 cast pistons, and they are way down in the hole (close to .080 IIRC).
I am getting ready to mock up a 67 383 block to check it for square and to see how far below deck the stock pistons are, in order to see if the L2315 will get me where I need to be. I think the 68-69 383HP piston CH is 1.932" and was close to zero or at zero deck height.
Sorry, I have no idea about the cam. Last cam I wasn't sure of (I knew it was a Summit cam), I installed it in an empty block and checked the lope lift with a dial indicator. Figured out it was the 6400 B/RB cam.

Update: The pistons are .006 down in the hole.... so I'm assuming there's been some decking going on? The motor has been ran obviously, but not long it's too clean. The only thing that has me concerned is there is a spot in the #6 piston that looks like the valve may have touched the piston.... the valve isn't bent or doesn't leak anyway? Just being cautious before putting back together and running it. Clearances are good on rods and crank. The cam bearings look good, so I'm just playing devils advocate as too how the mark got there? Still trying to find a confirmation on cam.... I have mic'd it and it's somewhere in the 485ish range for lift on one lobe. Any input would be appreciated! Worst care scenario... I'll degree it in and at least have the specs that way!
