My 71 Cuda is coded for hood insulation and undercoat. Would the underneath of the hood ever got sprayed with factory undercoat? Or would that had to have been done by the customer?

No, the under side of the hood would have just had the pad installed...no undercoat. Rustproofing companies did spray in the engine compartment on some vehicles I've seen.
