If I recall correctly, the adjustment for this clutch is .040" between the clutch plate and the flywheel. My question is whether this is a minimum and more is ok or is this where it should be(no more or less)? Presently, I have 1" free travel at the pedal, but the clutch clearance is more than .040", probably around .060-.070". Brand new McLeod clutch and don't want to mess it up!

I prefer .060 myself for nice clean powershifts and as long as you have good free-play you should be good. I like a good positive stop on the floor so you don't push it too far

No, .060" plate departure is where you want to be, pedal free play will be whatever it is. That's the least important issue. As long as there is any free play you are ok.
