Eyes aren't what they used to be... What are the issues of switching to the brighter LED headlights from the 5001/5006 halogen sealed beams on a '70 Challenger with stock wiring?

You need to know the wattage/amp draw on the new lights.

Relays would be a REALLY intelligent choice.

Do the relays first, to see what improvement you get. It's all the junctions and the headlight switch that's sapping the power to the headlights.
If the Halogens still aren't doing it for you, try swapping in a set of H4s (and H1s [IIRC], if you have a quad light car.) They really put out a lot of light, and the beam is better controlled, so oncoming drivers are bothered by it.
