Looking for the best way to remove spray on undercoating from the engine bay of my car and do the least amount of damage to the original paint..have tried laquer thinner and it works but if not careful will also take the original paint along with the undercoating. Any thoughts on other products or methods? Thanks guys!

That's what I'd start with. Won't hurt the paint at all. Tar remover may work also without damage.
