Since these new roller cams are going to cost me twice the price,
I was leaning towards a 53 mm cam
What's the advantage over a standard cam journal?

Less flex (both in bending and torsion), and you can make the base circle bigger.

I would go with the standard Ford size, which is 55 MM I think The larger journal sizes allow you to have a cam ground with more lift and not have to reduce the size of the base circle or grind the cam in closer to the center of the cam, to get the additional lift EDITED, I'm under the impression that the newer Ford motors come with 55 MMM roller cam bearings, and there not much money to buy them from Ford either I remember Earl Wade telling me years ago(1991 or so)that Ford had the biggest I.D cam bearings of all the U.S. auto makers, his cam in his NSS 427 F.E. 1963 1/2 lightweight Galaxy had over 1.00 lift back then I never got to measure the valve lift at the retainers but I think he had no reason to lie to me about that back then

A BBF is 54mm which is a very common babbit bearing size

What size would you need to go to if you wanted to run roller cam bearings?

Bring your wallet and take your pick. 65 m.m. , 70 m.m. , 75 m.m.
I am struggling to recall the largest I have read about , but 90 m.m. rings a bell.

You can do roller bearings at 55MM. I have a 55MM and 70MM cam both roller bearing

A simple way to do it is have the front four journals cut to the 429/460 Ford size and leave the rear journal stock Mopar. Comp has cores for this application. Dyno
