Does anyone know if the LA small block hydraulic kit cams will work in the 318 poly engines ?

No way. The valves are in different order.

You are looking at a regrind, which isn't a bad deal. I'd be talking to Bullet.

I believe some old school regrinders grind a quick hydraulic lobe on the solid lifter cams because they can get more lift if they eliminate the valve lash.

Chris Neilsen and Schneider are two of the traditional Poly cam regrinders, but I like the choice of grinds at Bullet, and the cost is reasonable, too.

Camshafts and intake manifolds are the two bugaboos waiting for you in Poly-land.

The block on the Poly engine isn't any wider than the LA engine.

I have used the crank/damper/t-chain/t-cover/fuel pump/oil pump/oil pan from a poly on a LA 318 before.

great way to score a steel 318 crank for a mid 80s LA318

Poly rods and pistons will also work, but the Poly pistons are taller than the LA OEM pistons and may need valve notches cut in them, depends on the cam.

Back in the day, before there were many 318 higher compression pistons available, this was a favorite trick.
