I have had this happen twice. Once the car sat a couple weeks and was hauled 1500 miles. Other time was initial start after rebuild. 472 hemi. It gets hot fairly quick and if you rev it up or enough to move it, it immediately cools. I wouldn't think a thermostat would act this way. Think its the fan clutch, and someone mentioned air in system and water pump not priming.
Curious what you guys thought

Make sure it's full of water first.

It could be it needs more air or water flow. check the clutch or put a straight fan on it to see if it keeps it cooler. If so you can work forward from there.

If it needs extra water flow then you may need to swap to a smaller Water pump and/or Larger Crank pulley to get more flow. Possibly a Police/HD Cooling stye water pump would do it.

After it gets the warm part out of its system it runs 180 and no problem. Weird

Sounds like a thermostatic fan problem to me if it stops after overheating.

(1) need more airflow (2) way less likely is it (in addition to #1) needs a faster WP ratio & an anticav plate is always good but this is an airflow issue
