I want to try some on track testing with air bleeds and was curious how big of a change in sizes does it typically take to see any changes?

Going down one size on a high speed bleed usually has a similar effect as going up a couple of jet sizes. But it can also change the fuel curve somewhat.
Most of the ootb stuff I have tuned on the dyno likes a bleed/jet change to get things working nice.
Track testing seems to back it up,a lot of carburators are built to be safely rich with a variety of fuels.

I've seen similar results with a 2 to 1 ratio... 1
bleed size to equal to 2 jet sizes(high speed)

One number... I have had to drill some also and that
tends to vary some
