What is the purpose for this? Replacing my intake with an air gap that has no crossover. Any adverse effects? Thanks!

Better driveability especially during warmup in cool climates. They would get plugged up then cause choke opening issues, when the heat riser failed to push the exhaust through intake man.
This carbon blocked intake indeed happens, saw it happen twice on my cousins 70 340 swinger. My 69GTX had a blocked off intake runner when I bought it. I opened it back up to make the stock automatic choke work correctly. It gets a little warmer but choke works great now.

If the intake crossover is open (not blocked in any way), but the heat riser is frozen open (as is common) does enough heat passively pass through the intake to allow the thermostatic choke to operate near normal?
somewhat normal , yes.

You guys make me feel so old! NO WAY is the heat crossover primarily there to heat the automatic choke. There were methods to heat the carb area way before the first automatic choke. It was done to promote fuel vaporization and to prevent carb freezeup.

Part right, part uNcorrect ....
The auto-choke(well type) IS controlled by crossover heating. PRIMARY use is for bester fuel vaporization. Carb freezeUP ?
Maybe when Cuba starts selling a bunch of ...
