i know not to use it when braking in a motor,

but after break in on a fresh street motor what viscosity is good to use where i normally would use 10/40 non synthetic?

Use whatever weight you would normally use.

10W-40 is a good choice.

10-40 synthetic sounds fine to me. When pouring, it'll pour thinner than a conventional 10-40, but will protect better across the board.

Shell Rotella T 5W40 synthetic in my 383. Plenty of zinc to protect the valves.

it is interesting that Shell is emphasizing the anti-soot-thickening properties of their new formulation to combat what is happening with increased EGR in the diesel trucks

I’d try 10W-30 first. If you get 10psi of oil pressure per 1000rpm with it, then you are right on. And if the 10W-30 works fine, you’ll be getting a little less drag on the internal engine parts and better oil cooling through improver flow over the slightly thicker 10W-40.

I would think you would be choosing a high zinc oil to protect the cam/lifters...

Very true, most of the 0W, and 5W oils that I know of currently are the lower zinc 800 ppm API SM rated lubes. One exception I know of, and there may be others, is Amsoil’s SAE 5W-30 Synthetic Heavy Duty Diesel Oil. The zinc level in this oil would provide excellent protection for a flat tappet cam with 1379 ppm of zinc. Also, the High Temperature/High Shear Viscosity (ASTM D-4683) of this lube is 3.4, so this oil has great film strength for greater protection under heavier loads. This oil was designed for heavy duty diesel engines and improved fuel economy, but useful in high performing gas engines requiring higher levels of zinc.
