Silcone is your friend and the only way to seal em up. If it's chrome, replace it and use silcone to seal it, no gasket.

Take some sandpaper on a flat surface and hit the
bottom of the housing to see if its flat... make
sure the intake is clean... the stat drops into the
intake(groove) then the gasket on top of the stat...
might still use silicone even with the gasket...
also make sure you havent cracked the housing
Some intakes dont have the groove so the stat would
have to go into a groove in the housing... make sure
one of them has the groove

Had the same problem with my 318 the other day. Edelbrock manifold and an aluminum water neck. Did just as was suggested above. Put sand paper on a flat surface and sanded it a bit, it was BADLY warped. So, I sanded it down flat, put on a little gasket sealant and a new gasket. No problems now.

I think they make those T-Stat housings warped from the factory
As said a clean FLAT surface and you're golden I had about an hour in getting mine srtaight first a file then some sandpaper wrapped around a flat piece of steel.
Now I have one of my gaskets on it with NO sealer been dry for years.
Thanks for the kind words Gus

If you are doing this in weather below 50 degree's the housing will not seal right with silicone. Do as Mr P stated and other but after done heat area with hairdryer and then apply silicone evenly on both sides and then install. I also stud my intake manifolds I changed two of those things last night and not one leak. But I do heat the manifold in damp humid weather regardless of garage or not if it is cold in the garage
